Ingredients

  • 2 cups (280g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/2 cup canola or vegetable oil
  • 2 teaspoons instant coffee, optional (enhances the flavour of the chocolate, but you can leave it out. You won’t taste the coffee in the muffins)
  • 1 tablespoon vanilla extract
  • 1 cup of chocolate chips and chunks

Instructions

    1. Preheat oven to 190C degrees. Butter 12 muffin cups or line them with liner paper.
    2. In a large bowl sift together flour, cocoa, baking powder, baking soda and salt. Add sugar and mix.
    3. Create a well in your dry mixture, add eggs, milk, oil, coffee granules and vanilla extract.
    4. Fold the mixture with a wooden spoon or a rubber spatula just until combined. Do not over mix. The batter should be thick and lumpy. Add chocolate chips/chunks and stir.
    5. Divide the mixture between the muffin cups and fill them almost all the way to the top. Bake at 190 for 15 minutes total or until a toothpick inserted into the centre of the muffin comes out clean.
    6. Transfer to a wire rack and let cool for about 10 minutes before removing from pan.

  • 2 cups - White Chocolate
  • 1 cup - Condensed Milk
  • 12 Oreo Biscuits

Instructions

Melt the white chocolate chips with the sweetened condensed milk in a saucepan over medium-low heat or in the microwave for 30 seconds at a time.
Stir in the chopped Oreo cookies, saving a few pieces to press into the top.
Pour mixture into prepared pan.
Refrigerating the fudge for approx 2-3 hours or until set.
Using a warm, dry knife, cut squares. Store in chiller in an airtight container for up to 7 days.

My easy recipe for 2 Ingredient Donuts makes a quick treat or snack. Yeast-free and no kneading required, turn the classic donuts into a simple and delicious dessert or breakfast.



Ingredients

  • 1 Cup Self Rising Flour ( 1 cup )
  • 1 and ¼ Cup - Greek Yoghurt / Plain Unsweetened Yoghurt

Instructions

    1. In a mixing bowl, combine the flour and yoghurt. Mix and knead lightly to form a soft dough.
    2. In a deep-frying pan or pot, heat up oil to deep fry the donuts.
      To check whether the oil is hot enough, fry a little bit of dough in the oil. The oil will be ready when the dough turns a golden brown and floats to the top.
    3. Pour the sticky mixture into a piping bag.
    4. Carefully drop the doughnuts into oil. Allow the donuts to fry for about 1 minute per side or until golden brown.
      Transfer the cooked donuts onto a plate lined with paper towels. If you are coating the donuts in your favourite toppings while they are still warm.
