You are going to LOVE my lemon cake recipe! This is truly the zingiest, most delicious and moreish lemon drizzle cake you’ll ever make. It is absolutely wonderful! What is great about this cake is it’s SO SIMPLE and EASY to make and has minimal ingredients, yet turns out absolutely divine. I chose this recipe because I have spent a long time looking for the right amount of ingredient and that was lemony enough! I love my lemon cake to be very zingy and moist so I ended up taking bits of different recipes and putting them together to make this one.
- 1 cup Sugar
- Zest of 1 lemon
- Juice of 1 lemon
- 3 eggs
- ¾ cup plain yoghurt
- 1/2 cup oil
- 1 cup Flour
- 1 teaspoon baking powder
- Lemon Syrup:
- 3 tablespoons lemon juice
- 1 cup powdered sugar
Preheat the oven to 170ºC. Grease a 20cm spring-form cake tin.
Mix the sugar, lemon juice and zest until combined well.
Add eggs, yoghurt and oil mix well.
Add in flour, baking powder and fold into mixture.
Add mixture into a cake tin and cook foe 35-40 minutes on 170.
To make the drizzle: add sugar and lemon juice together and pour over a cooled cake.
